Chocolate chip peanut butter cookie dough bliss ball recipe
These chocolate chip cookie dough bliss balls are delicious! They taste very much like cookie dough but are full of protein and good fats from almonds and peanuts. They’re super quick to whip up and they don’t require a high-powered blender like many other bliss balls. If you’re really keen you could probably do it by hand!
I love packing them in the kids’ snack box with some fruit and crackers for outings, and they also go very well with my mid-morning coffee. I used them for at an event where I did a mindful eating exercise with the audience and they were a big hit with everyone. Definitely more delicious than the humble sultana so often used for mindful eating exercises!
Recipe (makes 8 bliss balls):
1 ¼ cup almond meal
4 Tbsp peanut butter
4 Tbsp maple syrup
1 tsp vanilla extract
½ tsp salt
1 Tbsp cacao nibs or chocolate chips (optional)
Mix together using a food processor, blender or by hand.
Fold in chocolate chips after you’ve mixed up the other ingredients.
